  1. I'm hoping to get back to being more active on here at some point soon, life has been a bit of a rollercoaster this year but hopefully things are settling down a bit now.

  4. This looks great, I might have a look at getting myself a unit and giving it a whirl, see how it compares to my other thermometers. A quick question, are the probe proprietary or are they a standard probe for which replacements can be easily obtained? Seeing the design seemingly without any kind of silicone shielding where the wire enters the probe it's fairly like that at some point replacements will be require if anyone is a little overeager when it comes to washing them.

  6. I get most of my meat from my local Morrisons, usually really good. They tended to only have rolled briskets but they now do a pastrami style brisket, it's great because it's flat so you get a really good idea of the size of the joint, and it's got a great marinade with it. I've smoked a couple now and have to say I was impressed, lovely and simple if you want a very quick to prepare piece of meat to stick in the smoker. Ok they're not massive but they're a decent price so I have purchased 2 or 3 each time I've done them.
  7. I've got the Aicok one here, had it about a year now and it's been brilliant. Any time I'm smoking I try to make sure I've filled the smoker and once it's all done I portion up any extra, vac pack it and stick in the freezer for later.
  8. Depends somewhat on the user....? A mate of mine restores cars and can create pretty much any shape of panel with nought but clamps and an angle grinder

  11. I will definitely get along to one at some point but I do have a few dancing weekends coming up and I have to do some parenting at times too...? Good to see the kinky chicken cooker making an appearance, how did it get on this time?
  12. Oh man, looks like a brilliant weekend was had, shame I couldn't be there but I had a busy weekend of relaxing at a spa and going to a wedding reception ( @Waderemember katie in my department at work? Twas her wedding ) Food looks amazing as ever!!

  14. I have to say I just use a lid and wrap my plastic container with oven clothes and I've not had any noticeable evaporation on the cooks I've done, the longest being about 12 hours...
  15. That's why I use the oven clothes underneath, it stops pretty much any of the heat transferring to the worktop.
  16. I've not had any issues with mine which is very similar indeed. I've not used ziplocks as I have a vacuum sealer so I've only used sous vide bags...but i have no doubt someone will answer the question soon
  17. I use something very similar to that and it works fine. The only thing I do to it is to sit it on an oven cloth and wrap it with another couple of oven clothes to give it a nice bit of insulation which helps the temp come up a bit quicker and helps it stay nice and stable without the wand (I have the cheap Aldi one) having to do very much once the water is up to temp.
  18. I did indeed, I've used it a few times, including doing a couple of joints of beef which I've done to alabout medium rare then seared in a pan. I did one lot for a buffet for my mum's birthday back in march and I had a lot of comments about the beef being amazing ?
  19. Loving that Aldi one, if i had room for it anywhere I'd have one purely to keep smoked cheese and meat ready for smoking in.
  20. If my local supermarket has any ribs this evening (unlikely sadly) I might give this a try this weekend as I'm a bit too busy to be tending my smokers but fancy some nice meat :)
  21. Looks great, I'd love a massive smoker like that!! I'm intrigued by pulled turkey, was it nice?
