  6. I was testing out Pork Belly Burnt Ends this weekend using the method Here I had to use pork belly strips as that was all my local supermarket had on Friday evening when I was shopping for meat. After the first stage which was smoking on a rack for a couple of hours. At this point I had to sprinkle with a good amount of brown sugar and drizzle liberally with honey; then a good bit of butter cut and put on top. Then they were covered with foiled and went back into the smoker for another couple of hours. At which point they looked like this The next stage is to pour off the liquid, put some more brown sugar over the top and put it back in the smoker until it's caramelised and gone all sticky and delicious... There aren't any photos of this stage sadly as I was experimenting to see whether or not these would be any good if frozen after the first two stages, then thawed, brought up to temperature and then having the final stage done on the day of eating... I will let you know know when I give them a try in a few weeks but the I tasted after stage two were pretty amazing!!

  9. Very much not in jest, I'd love a Davy Crockett, as much as I like the challenge of keeping my temps under control (Wade makes it look very easy but I'm still very much newb!) I would love a set and forget smoker That I didn't need to be keeping so much of an eye on or that I could monitor while out. In my youth I was a member of a car enthusiasts forum and we enjoy a few nice discounts, twas a good idea.

  11. As per the title, Morrisons have portable gas stoves, as favoured by several of us for lighting coals for our my £10, they tend to be about £15 in my experience, so quite a good price.
  12. Only really looking for something small, more so I can just sticka joint on and leave it safe in the knowledge that it's doing it's thing while I'm pottering about. At some point I'll add one to my collection I'm sure, until then I may just have to concentrate on getting the best out of my Qmaster Lite to make it more reliable and accurate.
  13. Not wishing to start a new thread and covering old ground, but interested in the idea of a pellet smoker, are there any recommendations of entry level pellet smokers? I've seen Wade's Davy Crockett which is great and I'm very tempted to save and get one but are there any other options that offer similar levels of control (ie wifi and app controlled) but that are cheaper?

A while I got myself a qmaster lite to control the temps of my smoker, it works pretty well but it does have one flaw, when I lift the lid to do anything to the meat etc obviously the temperature drops in the cooking chamber. This causes the fan to come on when really it's not needed as the coals are just as they need to be for the temperature I want, this action of the fan coming on causes the coals to get hotter and the temp overshoots. If I could add in a means of stopping the fan from coming on for 10 minutes or so after I've opened the lid, to give the cooking chamber temp chance to get back to where it was I think it would work a lot better, at present I have to unplug the fan and try to remember to plug it back in which is far from ideal. In an ideal world what I would like would be something whereby I can press a button and that would activate a timer relay which would break the circuit to the fan for a few minutes. I'm guessing it might be possible to use something like this: DC 5V 12V 24V Digital LED Cycle Timer Delay Time Relay Switch but How exactly I could get it working is a little beyond my electronics knowledge... Can anyone help me with this perchance?

  17. Welcome to the forum! Sounds like a smashing plan to christen the smoky mountain! Any questions you may have or advice you may want, ask away and I'm sure someone will be able to answer them. Make sure to take plenty of photos of all stages of the cook, we do love to see them!

Just had an email through from B&Q about their new range of Rockwell bbqs, there's nothing too special of out of the ordinary really but thought the kettle might be of interest. https://www.diy.com/departments/blooma-rockwell-charcoal-kettle-barbecue/1851251_BQ.prd 57cm diameter, stainless steel grills, one touch type vent adjustment and at £85, not to bad a price either (so annoyed I didn't manage to pick up a weber for that price s few weeks ago!)

  21. I finally tried some of the smoked haloumi at the weekend. I simply pan fried it to give it a little gold colour on the outer and let it get a little soft in the middle and it was delicious! Next time i have chance I shall be getting several blocks and doing a full sokers worth, though obviously a little more tricky with the warmer weather coming. (mailbox mod might be needed at some point...)
  22. Having experimented with smoked chocolate (yummy) and smoked haribo (yuck) I've decided the next thing I want to try cold-smoking is hard boiled eggs which I'm then intending to pickle. From reading I've done it seems the most succesful method is to hard boil the eggs first then smoke and finally pickle. Has anyone smoked eggs before, or indeed pickled any eggs? Any tips?
  23. They're great, and best of all they have hover-over tips which tells me what they actually mean, which will be very handy as I never know what they are on whatsapp! ?
