Icefever
Any signs of flames in the fire box??? Ice
goldencrunchs
I’ll check after this game of overwatch haha!
Smokin Monkey
Did not realise you was actually cooking. You can stick with it. Pheasant needs to be 63’C (145’F) so could take a while. Open everything up and let it run. If all else fails finish the Phesant off in the oven.

goldencrunchs
I think I’ll have more success if I get a charcoal starter thingy
goldencrunchs
Here’s a picture of what it’s like now, it seems like there’s enough fuel but it still won’t go past the 150 area. I’ll see how the lamb goes tomorrow, I’ll have some proper logs then. Edited March 2, 2019 by goldencrunchs

Don't get it wrong they do work a treat, a lot of the guys use those little camping gas stoves. Fill the chimney for whatever quantity you need, light the stove and set the chimney on top for maybe 5/10 mins, hey presto a load of cherry red coals and away you go. From the photo, it looks like you used briquettes?? the first time I run my Landmann, I used just hardwood logs. You do have to keep a close eye on the firebox because of the speed the logs are used. I remember I seemed to be throwing a log on every hour or so??. That's why now I stick with briquettes, I'm using heat beads today, then throw in whatever wood for the amount of smoke I want. Rosemary & I go for a light to medium smoke, it suits us. I've got a couple of jobs to do fitting this new kitchen later on, can't start banging, drilling, sawing at this time..... Going to aim for around 0900 start, set up under the garage door like last week then the weather can throw whatever it wants at me.....I don't give a damn. Ice. goldencrunchs
I may be starting with you my friend! I’ve got a bit of Lumpwood charcoal but look what I’ve got now! Think briquettes will be needed too or?
goldencrunchs
I’m guessing I need to trim some of this fat? Maybe trim the bottom half so it’s more like the top?
Icefever
Jezza what did that cost? are you feeding a group today? Ice.
goldencrunchs
The woods to last haha! £5.95 a net
Smokin Monkey
Great video for the offset Smoker.
Smokin Monkey
Do not trim too much fat, fat is flavour and it will help to stop the meat drying out.
Justin
Yes flavour as fat renders. Lamb is a fatty cut anyway.
goldencrunchs
Okay I’ve kept it all on do we think we’re ready for a log here? I’ve been a bit braver with the charcoal
Smokin Monkey
All of that charcoal should be glowing red, to give you a good base, then start adding logs and trimming in your vents. Did you watch the video above?
goldencrunchs
Aaah yeah like in the video I’m with you! It’s so hard to get it glowing red
Smokin Monkey
That’s where a chimney start comes in handy. About £6.00 from the Range.
goldencrunchs
Aaaah the range has them?? Looked everywhere in Charlie’s haha! Thanks man!
goldencrunchs
A lot have turned white but little red. Gonna add a few more fire starters
Smokin Monkey
This is how to start charcoal, skip to 5 minutes in.
goldencrunchs
Perfect I’ll take a look my friend! My smokes a bit too thick haha. How do I reduce it down to the blue smoke we need?
Smokin Monkey
Heat, if the whole log is just smoldering it will produce thick smoke. When a fire burns hot you see little smoke, when it cool it billows thick white smoke.
