Just popped butchers to hand over some Woodsmoke forum cards. See if we can get some more active members. And these babies caught my eye. I am freezing them for the mo. Maybe a weekend super dish coming. I will post more when I workout what dish to do and it progresses. Any ideas welcome.

I try not to wrap it (unless) it is ribs maybe where i do what ever I feel at the time) I like, Sure it takes longer but that is ok. Spritz bottle works well, Like I did with the pacific pork roast, pineapple juice and mustard spray every hour at Smokefest18

I can only tell you what I do. Charcoal basket either side not underneath. Indirect lid on. Or a bed of goals but let them bed down to medium and over the top with lid on and control airflow

Yes, good tip. Still it its working fine already and no liquid is escaping. will be fine

Vacuum did pretty well but liquid coming out of the pork into the inlet and that point it thinks a vacuum is fine and seals. I put on three seals to stop liquid escaping and up that end on plate so it has to cling to escape. Not perfect but learning.
