    Exciting cook, Good luck with mate, patience is a virtue. Ar you giong to wrap or go with the stall. That pork I did I went with a long stall.

    Nice ribs. I would use belly pork for streaky and loin end for back so thick end?
  5. It was a full on Saturday, was great fun, among a brilliant bunch friends all supporting each other, loved it
  6. Pulled Pork took 10 hours hence 5am light up hotly followed by shower and coffee!
  7. Just baked the fat from the shoulder I smoked at weekend. Yummy salty crunchy.
  8. I like it has a cutter and you can make the pouch as long a you want so only the width is a constant

  10. Cool, it looks like a good deal though you can get it for similar price on Amazon too and there is a 2nd hand one on ebay for £25
  11. Not sure if it is any good but Groupon are doing Cooks Professional Vacuum sealer and 2 extra rolls for £43, I have ordered It is in transit so I will do a review when it arrives, I will be following Wade's advice when making bacon once it arrives.

  14. Glad you liked them. Easy to make. The temp is the key. Breast meat I get to 75 to 78c buy thighs I found at the Woodsmoke 18 to be more like 86. Blackened. They were delicious and a good improvement on my usual recipe. 9 hour marinade on that one you ate. Enjoy.

  17. That smoked cheese you gave me wade is delicious, I have been pairing up with toasted sourdough, tomato and mayonnaise.

That is a good idea...I think next event at Northern tailgate , rather than a big meat dish, i will do a selection of sides. lift the quality of that with some smoked vegetables etc. I have some ideas. Bit like the smoked artichoke hearts and pepper dish I did but wider scope. Also Thinking of having a theme like greek bbq or something like that for my next cook off
