  5. Looks easy enough to build. As long as you have the tools. Hardest part is going to buy the wood.
  6. I did rare to medium rare. 4 mins high heat 3 mins indirect. Really enjoyed them .
  7. And pudding. 2 punnets for a quid at market. All these are 1 punnet. Other is in the fridge. Sprinkled with icing sugar and served with yoghurt or cream. Stuffed now.
  8. Rump steak covered in a little oil then in a bag with cumin coriander paprika rub. Marinade 1 hour. Delicious with pitta bread
  9. This is exactly what I was looking for and I can't be bothered to build in. Ordered. https://www.forfoodsmokers.co.uk/acatalog/proq-eco-cold-smoke-container.html
  10. weber briquettes? I use them, burn for ages
  11. It is the buttermilk and rosemary that is brining not salt and sugar. its for flavour and tenderness. I promise you it is lovely, Weber recipe.
  12. Rolled meaty belly pork. Crackling to die for. Salt the scored skin first. Leave salt to work into the scores for 30 mins. I like to add a bit of coarse going black pepper too. Maybe a bit if spice extra.. good luck. Chicken: I think can be more challenging to get an even temperature ie breast cooked lovely and legs cooked through. Have fun with it. I am doing buttermilk brained rotisserie on Sunday. Not a looker but lovely flavour. It is a 24 hr brine on Sat.
  13. Excellent. Rotisserie ribs?
  14. Well done. Will be fun. Looking forward to meeting you.
  15. Finished mine ages ago, lovely, I waiting for it to cool down then I will be making some
  16. I think mine must be 15 years old then, my memory is blurry ! You could repair mate, just some legs needed with brace, easy to just screw some brackets on and some legs into bracket then brace the legs?? Polish up the vents with dremel or something like that? sand with dremel and varnish the handles. 2nd life. I can bring my dremel kit to 1st northern n tailgate if you want to have a bash...little project?
  17. Depends on build quality. I has lots of nice features but my Weber kettle has lasted 20 years and is still going strong with no rust or anything like that.
