  1. Whatever we do let's plan early and get it in the calendar. If Billing arrangements difficult then letstry another venue. Rent a monster house with lots of bedrooms for instance. Share cost. Airbnb etc. Lots of ideas.
  2. You are the queen of sous vide. Brilliant. Potatoes not worth sous vide. No gain on flavour and you would have to do high temp. Carrots and sweet corn cobs and beetroot seem to work best in me limited experience so far. Love honey and ginger carrots
  3. Sliced and packed now. On freezer. Beautiful sweet oil texture. Maple wood dust is lovely. Knife worked perfectly. Thank for the tips and advice. In the end it was 23hr smoke and temp never got over 13 degs c. 9.5% weight loss. But has turned out very good. Happy

  7. I had this this morning and was not that impressed. Too watery ( i like my porridge thicker texture) and the oats did not break down like they do in the pan. I was using jumbo oats but they were nice a soft so easy to eat. I guess to improve use less liquid than 3 cups to 1 but I use that ratio in the pan and it is perfect. Maybe a higher temperature will help to break down the oats than 68 degs c
  8. OK that is it 9% loss only but so be it. It is wrapped in lots of clingfilm and in fridge. Carving tomorrow. And vacpacking. Long Knife sharpened. Thank you for your help fellas

  10. Wrapped in clingfilm? I might wrap and leave it outside tonight in safe place. It will stink out the food in the fridge ( I do not have a separate one for smoked goods), Thanks for the advice. And yes i believe wrapping will relax the food and the small squeeze will brig ile out for softer texture, I will take i out in a mo 23 hours so far. Static 13 degs c in wsm at he mo. temp tonight is 6 degs so that is cold enough to leave it out

  14. Skewer method oh i did not see that when i saw you picture, you put the skewer through threaded horizontally? do you have photo from the other side mate?
  15. I have gone one ceramic bulb route, wsm is quite tight on space but i think I can rig it out. I suppose i could build a wooden one but lets try this first. ye sis aw the inkbird option but it was little more expensive.

  17. Um cancelled order, can not be bothered to wire it up input and out power. want something simpler not a project.

OK Well inkbird controller has 2m probe s can run the probe to the wsm from inside and keep electric connections inside, and run simple bulb and hard wire form the bulb int he wsm to inside plug to give the heating. Easy I think. Will give it a try. Might need bracket to mount bulb which is a bit more challenging inside a wsm but maybe get a stand to go next to the maze will stop it smoking up the bulb, no that would change the heat output and the light output does not matter?   19. Thanks mate, yes good ideas, thank you for the contribution. What sort of heater and thermostat did you use? I was thinking a light bulb might do a the trick I do not need a fan a fan the smoke ifs flowing beautifully with the pro q maze at the bottom of the wsm
