    I have some shop bought Kielbasa for Sunday as a side cook on the main which is pork & chicken....looking forward to it as the weather is good for this weekend. Ice.

    Welcome to the forum Sean. There's nothing like making your own sausages & curing your own pork for bacon. This way it's all down to you what goes into that sausage, no E numbers and "lips & arsholes" has the old buthchers would say. 😉. Curing your own bacon lets you add whatever you want in the way of sugar & spices and a few other items...I was reading a recipe the other day for a sausage that had whiskey added....now there's a thought...🤣. Ice.
  3. I do know of folks that make up headed note paper and use that as proof.....is it right??? that's down to that person. I found it very easy and did my card at the store, took but a couple of minutes.... I have a card and I'm allowed to take a friend in with me if I so wish....do you know anyone with a card that would take you along?? Ice.

  7. Hi & welcome to the forum birthday boy..😉...the ProQ is a good joice, I've had one for nearly 2 years now. I got her ready yesterday as we're off camping for a long weekend tomorrow. A spatchcocked chicken is a very easy & forgiving for a first time cook...read up (if you haven't already) on using sand in the tray and not water. Ice.
  8. Looking GOOD dude 👍...what recipe did you use?? I want to make Cevapi but there are about a 100 recipes out there all different, some don't use pepper or galic...some only use soda water??? it's a minefield. They do look the dogs doodars, what kit do you have?? Ice.

  10. Just got back from Bookers, I wanted some pork belly, but didn't have any until tomorrow...🤬 bought a pork loin and a few other items....will have to wait now before I can start my next lot of curing. Ice.

  12. Sorry mate I thought you only needed to remove a rivet and it would fit?? are there any videos that may show how it done.?? Ice.
  13. The one way I use to remove a rivet is to use a small dia drill and just take the head off the rivet and the body of the rivet will fall out. Ice.
  14. You can smoke a rump tail follow any tri-tip video for cooking times, I also use the tails in any beef recipe I do. I cut into small chunks when making beef stifado, also any beef & ale pies, beef & onion pies, it's very tender meat, when I brown it first I always use butter, but only cook for a few minutes or you will overcook and make it tough. Any slow cook recipe for casseroles this meat is the best....I am going to make some pork & beef sausages and will use maybe 500gms off a tail in the recipe. As you will see the tails are all meat no fat, so you have to be careful not to let it dry out while cooking..let us know how you get on..👍 Ice.
  15. Homemade sausages???? we shop at Booker and we buy beef rump tails, are your rump ends the same cut??. We love them, if you see any US videos on Tri-tips it's the same meat, we buy a bag of them at a time around £45. Ice.

  17. Another home brewer 👍...great, I racked 23litres of rhubarb wine yesterday, worked out at 22 bottles. I have another 23 litres bucket to do but that will be a couple of weeks. I've not made cider for years, but like you we have 6 trees on the farm that are loaded, also 8 or 10 crab apples in the wood. I'm having trouble with beer at the moment as it seems it's the one drink that fires up my gout??....cider seems ok?? I've around 7 kg of plums in the freezer that I'm hoping to use making plum jerkum. Blackberries are a wash out this year, so only the bullace to look forward to in another few weeks. Ice.
