Having done so much bacon the tailend of last year, and with hardly any room in any of our freezers, I had to hold back on curing, but we went to Booker over the weekend and picked up a loin of pork. I've cut 12 large chops and vac-pack them, cut the large end off for a loin joint, that left me with a middle slab bang on 2kgs. That's now vac-pasked with all the curing salts and 2 large teaspoon of Savory. Leave that for 10 maybe 14 days, rince and it's going in the smoker with a load of chedder cheese and maybe some haddock.... Just a quick piccie, sorry about the sun, and that date is not 12/2/52 🤣 it's 25th/2/21 🤣 Ice.

Under the current Covid restrictions, it seems likely that outdoor events and festivals will be allowed again from May....so with this in mind, a decision has been made with Admin to start the ball rolling and hopefully it will be held this year. We are in talks with the same site that we were going to use last year. We can't make an official booking until 15th March as they're closed to general public, due to current Covid restrictions, but come 15th March they can take official bookings but we are pencilled in from now, in the same designated area on the site that we asked for on our visit last time. A £10 refundable deposit per pitch via Paypal (info below) will be required from 31st March. All booking must be made through the forum, not the site, and because of the limit of 30 it will be first come, first served, this seems the fairest way. Additional info £5 deposit (refundable) for Barrier gates (Pay it on arrival), £5 deposit for electric top-up card and topped up as necessary any amount left on card is refunded on departure. All tents and pitches paid for in cash on arrival, no cards. ======================================================================================================================= The 1st Midland Tailgate Weekend will take place on 4th - 6th June 2021. The venue will be Marsten Caravan & Camping Park Address, Kingsbury Rd Sutton Coldfield B76 0DP United Kingdom The will be a Fridge Trailer on site for all to use and put meat. This will be a free and easy weekend, where like minded folk meet and BBQ. You can either Cook on your own pitch or cook on the main cooking pitch. We aim to eat as a group at approximately 17.30. Great weekend to get together and enjoy a beer, chat BBQ and eat some great food.   10. You'll see & read about doing the 3=2=1 method on ribs...don't stick to this,it's not written in stone. Over time you'll come up with what suits you. I go for 2-1.5-1.5 that works for us. Most of the guys have their own timings on ribs. You had rain today?? was the BBQ out in the rain?? if it was you did a great job.....I setup my smoker under the garage door if it starts to rain. Ice.

  12. 100% Rawce......that's what I thought when I looked at the photos....Big Joe will have to see how this test cook turns out, and if it needs it maybe drill out the slots on the outer vent to make them a little larger?? Ice.
  13. The next photo...Question, is this vent in this photo. the same vent as the next photo?? it looks like it to me from the pressing set into the lid?? If it is do they turn independently of each other? if they do that means your going to have to lift the lid off to set the inside one maybe in the middle of a cook and that lets out a load of heat that you don't want. Hope this helps matey?? without knowing the make of the BBQ it leaves us in the dark a little, but have a go and let us know how you get on. Ice.👍
  14. Hi Bickus & welcome to the forum....looking at a photo of a PKGO it shows a grill plate, which looks like cast? why not have a plancha half the size that would just sit on the grill?. That way you are able to use it as one unit. It all depends on how much space you will need when the time comes and you have to cook a load of burgers... Ice.

    Welcome to the forum Brodie, I did my first bbq of 2021 just last weekend. It's quiet at the moment with C19, but we can only hope to be able to hold a tailgate of sorts later this year...watch this space...😉. Ice.
