I already had smoking this batch of bacon for this morning, but following on from the phone call from Smokewood Shack I've just started off with birch dust straight from the bag, no microwave this time. Just sit back now and watch what happens........ Ice.

I feel the same at the moment, I'm thinking of buying some lave rock (small grade) to try in the bowl. Could your problem be you changed to sand, used the SF and a long cook??? it may be any one of these??? will watch to see how it turns out. Ice.

I had a very interesting phone call yesterday evening, I have put in an order for wood chunks with Smokewood Shack. When the order went through for whatever reason the first line of the address was back to front, and this call was from the owner just checking our address was correct. Well, we got chatting about this & that and I mentioned that I was going to start a cold smoke this morning on some bacon and that I always pop the dust into the microwave to make sure it's dry. Turns out that he has done loads of tests on the subject and there's no need to do this, the dust will still burn, a little slower but that means it will last longer. One of the main things when smoking is to make sure whatever type of cold smoker you use is clean off any carbon buildup no matter how fine it is. He cleans his with oven cleaner to make sure, as any carbon in the mesh can starve the dust of oxygen causing it to go out. I did suggest he do a writeup on this subject, I do hope he does as it would be very interesting. Ice.

I know most of us are thinking about Woodsmoke 19 at the moment, but anyone interested in this Tailgate needs to book a pitch very soon if your camping as we can't hold empty pitches for much longer. The site owner is telling me she has folks wanting to book the same weekend but she is waiting on us. If we don't get enough attending it's not a viable proposition or capable of working successfully....if this is the case then we may cancel no point in wasting our time. Ice.

It all boils down to your price range, The Landmann Kentucky thread on here would probably scare most folks away because of the mods that may be needed to bring it up to a workable bit of kit?? Some of the better-made offsets will run double or treble the price of the Landmann, so it's all up to your pocket?? If we have an idea of what you have in mind we can at least point you in the right direction. Ice.
