  2. Overmont on Amazon, I have this and it is great. I sealed it with lard.   3. Lol, one thing at time, suggest invest in something that will last and enjoy that before expanding. For me a Weber kettle gives you loads of options, lots and slo, hot direct and cold smoke and rotisserie, etc...... or a pellet grill like @sotv, who is the master of that round here i think
  4. Any electric in there mate, You could plug in a dehydrator and do some smoked charcuterie if you get he humidity under control,

  6. My local garden centre in Braintree Essex has/had a weber smokefire ex4 at a bargian price under £1K, bargain, I think it was 850 quid. I just do not need one. Probably gone by now
  7. Make sauce ahead and leave to cool to room temp. For 2 burgers Sauce. 4 tbsp tomato ketchup 1 tbsp rice vinegar 2 tbsp light soy sauce 1/2 to 1 tsp grated ginger 1 garlic clove crushed 35 g dark brown (use less if you prefer less sweetness. Heat in pan to boil and lightly simmer over low heat for 15 mins. Stir ocassionaly. Leave to cool yo roo. Temp. Burger. 370g Minced chicken thigh (I minced my own through coarse plate) 4 tbsp panko bread crumb Mix with 4 tbsp of the huli huli sauce. Make patties about 3/4inch/1.5cm thick. Push diwn middle with thumb about 1inch/2.5cm wide to stop pattie doming on grill Refrigerate burger for an hour so it firms up. Grill , keep lid on kettle as much as posdible 10 to 15 mins direct medium high heat 200 -260c (400-500f). Only turn once Grill pinepple slices for 4 to 6 min until mard. Brush pattie and pineapple with remaing huli huli sauce last 2 to 3 mins. When buger hits 74c it is ready. Serve with lettuce (and onion slice if you want. Toast a bun if you want)

  10. Yes I am at Quiet Waters too 3 4 5th Sept. August is fishing Holiday 11th to 25 August. Look if 19th July is what it is and it is and we are outside then that is still cautious, it looks to me that it is fine to do this end of July if we can still get the space. Toilets and showers mask as necessary there will be separation has there has been through lockdown. Anyway I can join in I will.

  12. I have smoked salmon overnight often usually when it is cold and i have a ceramic bulb connected to inkbird dialled in to 20c. I use ever reliable pro q maze. Dust, loads of options to buy, google. not sure there is a best, some times supply is a bit damp maybe, so microwave first for a min or 2 if concerned, never had that problem myself but then again the dust I have in inventory is in garage which has two dehumidifiers in it
  13. Do not let it stop you if there are showers, i have had the smokefire on wsm in the hail and rain, made no difference.

You will be fine with that, just go for it, techniques is the key, nothing complicated, smoke with minion method will be good to slowly smoke a joint of meat for instance., indirect salmon on plank to hot smoke salmon, Chicken wings and drumsticks around edge of grill and coals in the middle in a wide can. Lots to try out. good luck and lots of help here if you need it. I have lots of weber books I like, The weber websites has lots of recipes and tips on to to start off with. I did not even mention rotisserie kebabs!
