    Hi people

    Morning Cel555 & welcome....so let's get this sorted...an offset is not the easiest of smokers to start with, I know I also have a Kentucky. What's your idea of a standard BBQ?? a kettle (Weber style?) using charcoal? First off there's no need for apologies, the forum is here for that reason to help where we can....so start by telling us what you're trying to smoke or grill? how have you set up the smoker, what food are you cooking??. What fuel did you use? any info you can give us will help to sort out and we'll have you smoking in no time. Ice.

  3. You were in the right place at the right time that little kadado was waiting on you....... I had the opposite yesterday....I did a couple of sirloins and she wouldn't go over 220c...I struggled to get her to 250c, then gave up and popped them on. I've found 300c just right for steak, any other time as you said she will hit 300c with no bother....the only thing I can think of, is I used some coco briquettes I have left over instead of lumpwood??? we'll see what happens on Sat?? Ice.
  4. Same with me...I didn't get around to pruning the young plants.....peppers are doing well got half a doz so far on six plants. There's two here in the garden that I look after, I've started about 7/8 cuttings they are all doing well...figs have to be pruned back around 60%/70% to keep they smaller and then the fruit will ripen. Ice.
  5. I'll have a look at the name of one of my plants, think it's "Golden blush" not surt... but they taste more of tomatoes than any other I've ever grown...it just bursts your taste buds. I do bedding plants, this year there are flowers I can cut to take in the house, next year I'm doing a patch of wild flowers. Ice.

Just thinking about this OP.... how many of us do grow our own veg?? @Smokin Monkey posted about his corn a few weeks back...(hows that doing??) @Raptor72 doing well, try chicken wire around for the small critters. My Onoins have done well this year, they are now sitting on a pallet so they can dry off a little, that's if it ever stops smegging raining 🤬 carrots are being dug, another 30 foot row just seeded on Monday for a late crop. First broad beans now finished second planting will be ready in maybe 2 weeks, climbing beans coming along as are the marrow's giving them to family & friends. Turnips & Swedes going in today for winter stews. If I have time later I want to start erecting the shed along with my 8x6 greenhouse. The best job today will be fitting my new 6.5hp 4 stroke engine to the Merry tiller..the previous guy took the engine with him (it was his) so I've just got hold of a new one so I'll be up & working next week. The before & after shot...😎 Come on guys...what's your gardens growing??? Ice.
  7. It's a great piece of kit for it's size....suits us just being the two of us...I'll light it up this afternoon and there will be two sirloins going on for about 2 mins both sides... Ice.
  8. A 2/3 chimney of large lumpwood.....then about 12/14 coco briquettes on top in the centre...I wasn't after a long burn so no need for a snake/minion type setup. Ice.
  9. That's the best part Steve. I must admit I'm going to fire tape my proq after watching this afternoon how there's a thin trace of smoke in places around the top ring section. It looks like it worked on yours? Ice
  10. Well it all turned out ok......temp sat at 125c for about an hour, then the sand must have dried and it sat at 130c till the finish....I'm chuffed...sand for me from now on. Ice.

Got folks coming today, so bbq later.....bought a bag of play sand from Homebase, filled the water pan maybe half....did read think it was @Mack said fill about a third?? trust me to be heavy handed. 🤔 Any way it was taking it's time to come up to heat so I decided to take some of the sand out, as it seemed to be getting nowhere. Scooped out half of what was in the bowl and noticed it was steeming, the sand was damp, why didn't I think of that?? the sand was taking all of the heat. 🙄 Since taking sand out the temp is now building, thank the BBQ gods for that.....talk about low & slow, we'll be eating at midnight at this rate. 😂 Ice.

Unless you have a deep pocket, buying a slicer is a bit of a nightmare, we payed a couple of hundred for a slicer, which works well but I have a post on here about how it doesn't slice all the way through. You have to stop and trim the end of the bacon and start again. but folks say that they all do this?? it seems only the big industrial ones do the job ok. Some guys leave the bacon in the fridge, or freeze for a short while then cut with a sharp knife... Ice.

  16. It arrived on time, now sitting in the garage, I'm hoping to season it this weekend as we have folks coming around for a bbq, so I may just get it done before I start any cooking. 🤞 Ice.
  17. @Stuarty84 have you seen the video where the guy use small cakes to test the temp across the smoker?? This is not the one I was on about but it shows the same trick.....he starts at around 2.16...well worth it. Ice.

  22. @sotv showed me his plancha at WS19, and I thought that would work great when we're on holiday in Sept. Take the Proq with one section ring and we'll be setup for all our cooking needs for the week. Ordered from Macs and should be here today via DPD....we have friends coming this Sat so I may take the time to season it at the same time?? Ice.
