Hi there

Hi there. After many tries and a lot of help from other members I finally managed to get signed up here.

I currently have a UDS and run it with a homemade PID controller. 

My oldest son is a chef and I try and get my meat from him and his latest is a salted brisket so pastrami here we come!

 Looking forward to sharing what little I know and picking up some good info as well

Welcome aboard. Great of you to join us. I have just sliced up smoked bacon and I have smoked salmon sliced up too. Cheese smoked and mellowing in fridge. Pork loin curing in fridge is latest experiment. All inspired by this forum. Enjoy.

I love pastrami mate so please let us know how you get on and tips 

as mentioned if your free next may we have the anglia tailgate

Ok will do. My wife is in rather poor health at the moment and we don't know how long for but I how to get out to a meet or maybe the maldon festival

It was quite good this year . Big event I’d love to enter a team for competition there 

my old band members were in the status quo tribute band
