Wade Posted October 1, 2018 Share Posted October 1, 2018 Mackerel is not a fish that that is suitable to be eaten raw because of parasites - even when cold smoked. "Raw" mackerel that is used in sashimi/sushi is first cured in both salt and vinegar in order to kill off any potential parasites. Hot smoking of course makes it totally safe.
