Thanks for that. I’ll give it another try.

That sounds great. The bay leaves sound a great idea, I will try that on my next batch. I’ve done two lots with loin and one with belly, and found the belly a bit tough. Have you noticed that at all or had I just got a bad cut for the belly?

    Brisket

Well you did it on the right day Mick. The heavens have opened today. Even my dogs looked at me to ask: “we don’t have to go out in that do we?”

Looking good mate. Hope the weather holds out for you.
  6. looking forward to seeing the cook. I think I’ll make sure I get a bit more practice before I give it a go.
  7. I’m going to guess no one is going for it in the weather we are having. I usually go for a good run on a Sunday, but funnily enough I decided to give it a rest this morning.
  8. Hi Paul i would say a good kettle bbq is very versatile and useful for those people who don’t have a lot of space. I have a Weber Kettle and with the new grill they have had a small section that can be swapped out for other parts - skillet, pizza stone, wok, Dutch oven, and others I can’t remember off the top of my head. I have the pizza stone and skillet that I’ve used countless times. Long cooks are fine on it as well. I’ve cooked for over 9 hours, and there are a couple of posts showing how to set the kettle up for long cooks. They can be used for pretty much everything from what I’ve read. I’ve always advised people who are looking for a basic bbq to get a Weber Kettle as they have so many uses. hope this helps. By all means ask more questions.
  9. They have a good choice but it is sadly quite expensive.
  10. I haven’t got into that yet. The wife has only just forgiven me to buying a WSM at 0500 on Black Friday without consulting her. I also don’t think I have the time at the moment to get into something else.
  11. No not a dry house. A few bottles of wine. I’ll contemplate veganism as I have a bacon sandwich for breakfast.
  12. No beers in the house 😭😭
  13. Home made burgers, homemade bacon, homemade rolls, and homemade chips. It tastes so much nicer when you make it yourself.
  14. Might give that recipe a try. Must admit. Usually the wife does the pizza dough and it’s a lot nicer. We make a pizza we got when we went to sorrento. It’s real easy, mozzarella with grated lemon zest. It’s a real fresh tasting pizza and reminds us of sitting out looking over the coast.
  15. What would you say is the best and most reasonable priced cast iron?
  16. Made a steak and ale pie last week which was a bit too heavy on the ale, but I wasn’t bothered. More ale the better I say 🍺
  17. I keep thinking of making videos but I haven’t really got any of the equipment. Got a few ideas of what to film but won’t be any time soon.
  18. I read that if you keep dough it gets better after a day or two. However that’s only from one website so far so not sure how true it is.
  19. The pizza wasn’t that great yesterday but we had more dough for today and it’s much better today. Also dryer here today so the umbrella isn’t needed.
  20. Borrow the wife’s umbrella and get the coals lit. Pizza for dinner it is. and with my fabulous helper.
  21. Ok mate. So it’s me, the wife, and the little one (3 years old). Staying in a tent.
  22. I’m interested. When will we need to pay as I’m waiting on payment for a large job so going it might not come in until April time.
  23. I make my own rubs as well. It’s nice trying different types of rubs, also Good to make rubs with less sugar in them.
