    Welcome abroad Shaun and thank you for joining group. Certainly we can help you. read through the forums and ask questions as you need. In the first instance look up minion method for how to slow cook and hot smoke meat such as brisket for a long time. I am Weber user to with a kettle and a smokey mountain.   7. Welcome aboard. Love this UK forum and having been to woodsmoke 18 I can tell you I have rarely met such a great bunch.
  8. Be careful not to immerse in water. That buffers the probes up . And test them as they can be widely inaccurate.
  9. Ok good though with minion method I have done 15 hours brisket. No problem. Note vortex and slow and sear are not same thing. They give different results. If you are going to northern tailgate I can loan you the vortex cone. .
  10. I saw this a few years ago and researched it. Decided not enough practical benefit compared to water tray and minion method. I have a vortex. It is good but the fat from the surrounding meat, like chicken drumsticks and wings makes a right mess of the kettle as no drip tray. Can bring to northern tailgate if anyone wants to give it a go.

  14. All. We are trying to boost group activity by arranging regular tailgate type events. These can be campsite based or whatever really. What do you think. If there is enough interest I will organise something for an inaugral and we can see where to go from there in the future.

  20. Post everywhere details some peeps are national. I will go to northern tailgate. Surely southern one is possible. Midlands is hardly southern to Essex and Kent?
  21. Delicious. Apple soy sauce pork. Dare I say what you might expect on a philipino meal. Char duo Cooking adobo I added water several times to get the pork right and when I eventually boiled off water to glaze then left with stock tender pork pieces. I 7sed cast iron skillet on low to medium heat. I tweaked as appropriate Dinner is served
