  1. Yeah worth stocking up and throwing a few in the freezer. Haven't tried them for a Brisket or shoulder yet but I'm aiming to do a BBQ for the other half next month so I'll give them a go.

Popped in to Bexley's Butchers in Old Swan and got talking to the butcher to see if they could source larger cuts for me - stuff like packer briskets and whole shoulders - which I've been ordering from Tom Hixson and Turner and George, or going down to the abatoir on Prescot Road at silly o'clock in the morning to get. After a good chat it turns out they supply a few of the restaurants in Liverpool, including Simon Rimmer's gaff in Wootlon. Anyway they can get their hands on Jacobs ladder so I ordered a slab. Came in at £13 and they were were too notch.
  3. It's a Yoder Jacket for the YS640. I had a trip to the US a couple of months back and smuggled it back in my hold luggage (the jacket not the smoker 😄) But a welding blanket would do the job nicely. Just needs to go over the main chamber surface. Your LG900 looks easy to adapt it with a single panel and some U shaped clips under the lid.
  4. Yep Lil Devils from Liverpool Wood Pellets. Last lot I got worked out £5 bag. Go down and collect, just call first to see if they've got stock in and mention you'll pay cash. I get roughly 20hrs cooking per bag (added an insulating jacket so it's more efficient). In all honesty I've tried Treager and Cookshack and there was little difference to Lil Devils. If I need an extra boost I just use a pellet tube and BBQ'ers delight flavoured pellets. Works it much, much cheaper. Will give the pork belly method a go caramelised anything is full of win 💪
  5. Has anyone had anything from them recently? Picked up a 2 X 12kg bags last month (from cpl via eBay) but only got around to using it this week. Bugger me it's terrible.... Small chunks and they feel overly light and not very dense - candy floss like. Cooking with a full chimney worth on the Weber Kettle nets about 30 mins cooking time before it wastes away, the heat drops dramatically and I need to add more. Cooked a spatchcocked chicken on Thursday and had to add 3 loads..... Last good bag I had would burn steadily for at least 2 hours and had chunks the size of a babies head!
  6. Hey another Scouse Pellet Smoker! Welcome! Pork belly looks good what was your process? Had my pellet smoker for a year now and I've found a place down in Bootle that does cheap pellets.
  7. Well that was a breeze! Both the diffuser and cover fit perfectly in my duffle case and there were no signs of it being fingered by security bods. Though I did get stung for an extra 5kg excess luggage charge ($100) it was worth it. KLM don't use a sliding scale charge either and I would have been able to bring a few other bits back. (Had to leave a container of seasoned salt behind) 🙄 Did a couple of BBQ's at my mates place whilst in LA, too. Aside from the astronomical cost of meat, like a fresh chicken costing $13 I found the quality of meat to be excellent. USDA rating needs to be a thing over here. Roll on next weekend I'm planning to do some cowboy ribeyes and finally get to use the grill grates I've had sitting round for a year!
  8. Find your nearest local abattoir. Most major city's have them dotted around. It's where most of your independent restaurants get some of their meat (a lot of them use Brakes for larger deliveries). A lot of the Chinese restaurants here in Liverpool bulk buy their ribs from the abattoir, it's almost an adventure in itself to stand and watch them haggle with the traders for 30 boxes at the best price! Then I come along wanting one.... 😄 Just a note on Brakes. Tried joining through my partner's catering business but they want a minimum £200 spend per month before they'll even flash their catalog past your eyes.
  9. Just realised I've not posted a picture of the UDS I did. You can just make out the scorched remains of the diffuser plate mentioned in one of my previous posts. Still get used now and then 😄
  10. Thanks chaps all encouraging views! I'm going to bring back an insulating cover for the Yoder as well and the value of both items is below the threshold for being tugged for tax. Will keep a copy of the invoice inside the suitcase so if customs (on either side) decide to have a nose, they can at least work out what is. Rather then guessing if it's a part from an armoured tank and I end up with the white glove treatment
  11. Folks, I'm off to LA to see a buddy of mine in May. Whilst there I'm planning to pickup a few parts for my Yoder Smoker and bring them back in my hold luggage. One of the parts is a steel heat diffuser with access door, it measures 75cm x 45cm and weighs roughly 7KG: https://www.atbbq.com/yoder-smokers-heat-diffuser-access-door.html I've got a Samsonite Duffle big enough to take it back and it won't bust the 23KG weight limit for the airline we're travelling with. Question is will they let me out of the county with it, being how we know the US authorities are with security etc.? And I guess the back into the UK too?
  12. Should really update this seeing as I started it! Ended up finding a local pellet supplier in Liverpool, called Liverpool Wood Pellets. They stock a brand called Lil' Devils and they come in at roughly £5-6 per 9kg bag if I buy in bulk and collect. http://www.liverpoolwoodpellets.co.uk/ourshop/cat_1462169-BBQ-Smoking-Wood-Pellets.html Tried fancy, expensive pellets and the rate my Yoder goes through them in winter just doesn't make it economical unless I'm using a cheaper supply. Results have been fantastic with Lil' Devils. Smoke ring always present and they impart a nice medium wood flavour on anything I cook. For reference a bag lasts upwards of 12 hours. Which, cost wise, is getting in to the charcoal territory for bang per buck. Excuse the barbaric cutting but you can see the smoke ring on these short ribs. Best I've had considering pellets were the source.

    If you want load and forget then a decent pellet smoker is the best choice. Also doubles as an oven. It's a gargantuan both in terms of cost and weight, but I can highly recommend the Yoder Pellet smoker range. The YS640 will easily hold 6-8 racks of ribs.

    Cheers, I'm thinking of treating it as just a big ol' sausage (due to it being in a skin), which I've smoked before at 275F with good results. Albeit the Macsween jobbie from Bookers would take a whole lot longer the principal would remain the same. Making sure it's warmed all the way though may prove tricky though. Would prefer not to pierce that skin!

    Speaking to one of my (North of the Border) colleagues earlier and I mentioned the Macsween Haggis I'd clapped eyes on whilst in Bookers recently. Got me thinking.... could it be smoked. Usually I'd simmer a Haggis in a water or, if pushed for time, nuke it the Microwave. But would using the smoker add (or take away) anything from the usual way of cooking and what temp would suit it for best results?

  18. Make sure the lip is level first, mines a bolted piece of ally so it was easy'ish to bend and position with clamps then drill to its final spot. Then to make sure I had a good seal I used the BBQ gasket stuff from lavalock. Makes a nice smoke free seal. The weight of the lid works a treat.
  19. It's surprisingly durable compared to paint. Takes a lot to scratch it. Only downside is you can't go above 150°c for long periods otherwise it'll discolour.
  20. You jut have to find a *coughs* friendly powder coater Helps if you choose a colour they tend to do a lot of other stuff in as well. Luckily a mate of mine wanted his wheels doing in a flat black so I got my UDS and Weber lid done. Turned out great.

Ash catcher was from Clas Ohslon, 52cm jobbie and costs a whole £7.99! https://m.clasohlson.com/uk/Metal-Tray/40-7580-1 Diffuser plate was just a steel pizza pan from ebay, rim wizzed off with a angle grinder and then hole pattern made with a hope drill using various sizes. My OCD took over hence the crop circle like design ?
  23. Fantastic build! Just a tip on the diffuser, if you add some holes to it, it'll help flavour the food and prevent fat accumulating/pooling during cooking.
  24. She is! If a little heavy (said quietly so she didn't hear) :D And for those who were wondering... no, the toast didn't go waste! Made a nice rocket salad and added smoked croutons.
