Made all the better with Jess Pryles BlackBerry sauce. You can find the recipe on her website. I had some BlackBerry brandy in the cupboard which I added. Only used venison once so far, very differently from this though, used a Highland Game Venison Grill Steak (mixture of venison and pork) flattened out in a Fattie I think blackberry sauce you mentioned may well work with this, if I pour a small amount enough to just soak in to meat and the crushed blackberries in the middle before rolling and maybe glaze the bacon with it, just before taking it off the smoker? it may add an interesting flavour to the finished fattie.
