Justin Posted May 7, 2020 Share Posted May 7, 2020 (edited) Great, one of favourites, good thick pork chops grilled on the kettle, lovely, take off at 65 degs c and rest for 10 mins wrapped in foil. I agree sugar can over power make you own rub with no sugar, herbs or spices, buttermilk is nice too. I don't brine but I know some swear by that.
