Mac n Cheese Stuffed Meat Balls

I gave into the persistent requests from my lad & knocked up some of the Mac n Cheese stuffed meatballs from the Macs BBQ recipe page. They are always a favourite in our house.

On this occasion though I supersized them with large macaroni, a blend of cheeses Cheddar, Gruyere, Edam, Ilchester Mexicana & Shropshire Blue. They were more tennis ball size than golf ball. I was pleased with the outcome, I think the fact they were larger helped prevent the cheese from drying out when smoked. I found the smaller balls would lose some of the creaminess of the cheese.

Looking to get some Sodium Citrate to try out, do you know if Trisodium Citrate is the same thing with a different name or are they actually different products?
