  1. Can anyone provide me with the best number for La Hacienda customer service? The hairline crack in my firebox has developed into a monster crack and isn’t going to last much longer.
  2. Gridiron looks like a great online option. If you don’t want to bulk buy and want some where local http://www.bobsfamilybutchers.co.uk/ is a great option for you as it is 20mins from Berko. They supply a lot of the BBQ comp teams so quality is great.
  3. You won’t go wrong with either. I usually go with 3-2-1 fo St Louis 3hrs smoked at 225f spritzed with apple juice every 45 mins then 2 hrs wrapped then finally last 45 - 60 mins naked but mopped with bbq sauce towards the end. It is worth buying good quality ribs and avoid the supermarket if possible. I have moved from Morrison’s to Costco but have recently got ribs from Bob’s Family Butchers. wow definitely worth the effort and little extra cost.

  5. I have had 2 12kg bags recently from B&Q when they had 20% off promotion and I have been really happy with the quality and size. The first bag did spit a bit when in the chimney but haven’t noticed it in the second. Burns really hot.
  6. Yes , very clean. It was 4kg and I ran it at 225f for about 18hrs and pulled off when the internal temp reached 195f. I then wrapped and rested for 2hrs in a cool box. It pulled beautifully and was very moist with a great flavour. It was my first cook with a bone in shoulder and it was definitely worth the extra cost and cook time.
  7. I have just completed my first ever over night cook on my UDS after getting a bone in half Pork Butt for the weekend. I used an inkbird PID with a cheap usb 5v fan off eBay maintain temp and it worked a treat. Sat at 225f all night steady as a rock.
  8. That is a great deal. does anyone know how they perform in comparison to a Kamado and pizza stone? I am tempted but have designs to get a Kamado grill at some point next year.
  9. Hi Gang, Since I discovered the benefits of spending more on better quality fuel I have been in the habit of choking off the charcoal after I have finished cooking and reusing. Sometimes it take a little longer to get it going when trying to relight so here is how I speed up the process. If you take two ribs out from the bottom of a Weber chimney it fits perfectly over the centre of a cheap eBay camping gas ring. Result is quick and consistent starting of the chimney every time.
  10. Hi Stevie, You wont go wrong with either a ProQ or WSM but if you have basic DIY skills and tools why not build your own version by making a Drum Smoker. It is not difficult and should cost around the £100 mark. If budget is not a problem I would be tempted by a ceramic grill.

Hi Jay, Nice looking joint you have there. if it was me I would remove the skin (save it for Crackling) and trim to reduce the fat cap but be careful not remove it all as that’s where you get flavour and the rendered fat keeps the meat moist. I am looking forward to see how it turns out for you. Cheers Dave
