  1. Having done so much bacon the tailend of last year, and with hardly any room in any of our freezers,  I had to hold back on curing, but we went to Booker over the weekend and picked up a loin of pork.

I've cut 12 large chops and vac-pack them, cut the large end off for a loin joint, that left me with a middle slab bang on 2kgs.  That's now  vac-pasked with all the curing salts and 2 large teaspoon of Savory.

Leave that for 10 maybe 14 days, rince and it's going in the smoker with a load of chedder cheese and maybe some haddock....

Just a quick piccie, sorry about the sun, and that date is not 12/2/52 🤣 it's 25th/2/21 🤣

Under the current Covid restrictions, it seems likely that outdoor events and festivals will be allowed again from May....so with this in mind, a decision has been made with Admin to start the ball rolling and hopefully it will be held this year.

We are in talks with the same site that we were going to use last year. We can't make an official booking until 15th March as they're closed to general public, due to  current Covid restrictions, but come 15th March they can take official bookings but we are pencilled in from now, in the same designated area on the site that we asked for on our visit last time.   A £10 refundable deposit per pitch via Paypal (info below)  will be required from 31st March.

All booking must be made through the forum, not the site, and because of the limit of 30 it will be first come, first served, this seems the fairest way.

Additional info £5 deposit (refundable) for Barrier gates (Pay it on arrival), £5 deposit for electric top-up card and topped up as necessary any amount left on card is refunded on departure.

All tents and pitches paid for in cash on arrival, no cards.

  3. You'll see & read about doing the 3=2=1 method on ribs...don't stick to this,it's not written in stone. Over time you'll come up with what suits you. I go for 2-1.5-1.5 that works for us. Most of the guys have their own timings on ribs.

You had rain today?? was the BBQ out in the rain??  if it was you did a great job.....I setup my smoker under the garage door if it starts to rain.

Based on what Wade has said on various bullet smoker threads, those vents look a little small to me. However, bullets tend to be higher than wider so the draw might be different than on a short/wide kettle.

100% Rawce......that's what I thought when I looked at the photos....Big Joe will have to see how this test cook turns out, and if it needs it maybe drill out the slots on the outer vent to make them a little larger??

Hi everyone , I was recently given a kettle bbq and I am hoping too be able too learn how to smoke on it , I have been watching alot of videos online on how too do low and slow cooks , one thing that I noticed alot was that temp controll is key, after lots of videos and reading I now think i am ready and understand how too regulate temp and maybe ready to have ago at maybe doing some ribs , the stumbling block I have is that all videos all show weber kettles , mine is not a weber and the vents I have are different,  I know that it's still the same technique in regards too how too control temp ,

the kettle I have was given too me my by my brother , I'm not sure if the vents are set up correctly , there is a vent adjuster on the outside and inside the lid, is that correct or should both be on the outside ? I'd be grateful if any of you could have a look at the vents i have and possibly let me know if they are set up correctly and let me know if they need too be used any differently

    Thanks in advance

Ok Big Joe I'll have a go on this........this first photo looks the same as a Weber bottom vent which lets you drop out any ash that builds up. It also lets in air to control the coals/lumpwood that's being used.

    20210217_134358.jpg

The next photo...Question, is this vent in this photo. the same vent as the next photo??  it looks like it to me from the pressing set into the lid??

If it is do they turn independently of each other? if they do that means your going to have to lift the lid off to set the inside one maybe in the middle of a cook and that lets out a load of heat that you don't want.

If the answer to the above question is yes they are one vent, then what I would do is a test run first....set the inside vent to wide open....then use the outer one to control the heat. Use a temp probe to watch the temp at the grill plate....an easy test is cook a chicken...spackcock it and it cooks nice and even not a lot to go wrong, if you have done ribs before then go for it...if not ribs can bite you in the arse if your new to BBQ'ing.  :th_INGardenbbq7:

Hope this helps matey?? without knowing the make of the BBQ it leaves us in the dark a little, but have a go and let us know how you get on.

  6. Hi Bickus & welcome to the forum....looking at a photo of a PKGO it shows a grill plate, which looks like cast? why not have a plancha half the size that would just sit on the grill?.  That way you are able to use it as one unit.

It all depends on how much space you will need when the time comes and you have to cook a load of burgers...

Looks really good. I think I need to invest in a smaller bullet smoker. I've got a 57cm Weber Smokey Mountain, and the thing is fantastic, but it's a monster. What size is your cooker there?

    Hi Paul...I run the Frontier spec is...Assembled dimensions: (H) 102cm x (W) 43m, Grill Diameter: 400mm Weight: 16KG

    Hope this helps..

    Cheers Ice.

  9. Welcome to the forum Brodie,  I did my first bbq of 2021 just last weekend. It's quiet at the moment with C19, but we can only hope to be able to hold a tailgate of sorts later this year...watch this space...😉.
