28 Day Aged Beef Short Rib, Smoke or Stew?

Going to smoke some pork ribs and a couple of turkey legs/drumsticks the weekend and was in the butchers and he had a couple of these 28 day aged short ribs for sale. Never smoked beef ribs before are these suitable to do this are they better off in crock pot Guinness stew. If smoking is the best option any trimming of fat  needed, can't see any silverskin on them to remove.

Definitely be cooking them again, melt in the mouth beef, Delicious

Took them up to 200F didn't dissolve all the fat in the middle, but cut the meat into bite size chunks and eat them like that. Surprised how much meat there was on them, having never done them before.
