We,  I say we but in fact,  it was all down to Rosie due to me suffering from my smegging back....

I did prep the pork loin,  injected with pineapple juice,  with small chunks of pineapple inserted into slits in the pork.  Then a pork rub all over followed by a layer of bacon on top. This had a foil cover on for the first 2 hours,  which was then removed and Rosie brushed her own glaze over a couple of times during the last hour or so.

Rosie did 2 Sea Bass and a Sea Bream,  lemon & parsley along with s&p, wrapped in foil, very straightforward for us due to time we had.

We talked about the weekend on the way home and turns out Rosie got quite a kick out of it all and is looking forward to having a go in her own right next time. :thumb1:

Caramel Rice Pudding Sous Vide.

Preheat water bath to 93.3 degs c

1 litre canning jar with lid (I use kilner jar)

  • 750ml water
  • 205ml short grain pudding or sushi rice
  • 625ml whole milk (divided)
  • 6 tbsp (90 ml) Dulche de leche (I make my own form evaporated milk and sugar but you can make straight by heating can of sweetened condensed milk)
  • 1ml kosher salt
  • 1ml vanilla extract
  • optional 1ml ground cardamom
  • optional 1ml ground cinnamon
  1. In a medium saucepan, bring water to boil over medium-high heat, add rice and blanch for 3 minutes. Drain in a colander.
  2. Place rice in jar, add 375ml milk and stir to combine with rice. Wipe rim of jar and add lid until just snug, (tighten with finger tips alone for a snug fit). Immerse jar in preheated water bath and cook for 30 mins.
  3. Using tongs, remove jar. Using a clean kitchen towel, open jar carefully (it will be hot, be careful). Stir in dulche de leche until thoroughly combined. Add salt, and vanilla (and spices if using) plus 125ml of milk. Stir well, . Wipe rim and reseal jar snug. return to water bath for another 30 minutes.
  4. Again, suing tongs and clean kitchen towel, remove and unseal jar.  Add remaining 125ml of milk (or at least as much as will fill leaving 1cm headspace min from top of jar). Stir well to combine and return to water bath for another 30 mins.
  5. remove jar as before unseal as before and check for doneness. If still al dente, and all the milk has been absorbed and 2 to 3 more tbsp milk or water, leaving at all times 1cm headspace at top of jar. Stir well reseal and pout in water bat for further15 mins.
  6. Remove jar for bath and leave to stand, unopened until cool, about 2 to 3 hours. Refrigerate or serve at room temperature.  It will keep in fridge for about 5 days


Tip. Rice absorption and time to doneness depend on the variety and age of the rice.  For best result, if you can find it American sushi rice but any short grain rice is good, DO NOT USE LONG GRAIN RICE such as ARBORIO because it will take too long to cook


Want MORE? Use as many jars as you want but not jars bigger than 1 litre
