Skagg2000
Still trying to find the perfect Mac n Cheese recipe. Had another go today, the taste is good but i'm not happy with the texture. Onion, Garlic, Butter, Bay Leaf, Nutmeg, Salt, Pepper, semi skimmed milk, Wooky Hole Cave Aged Cheddar, Provolone Dolce, American Mustard, & a healthy splash of Worcestershire sauce, oh, large macaroni,. All smoked for an hour or so in cherry wood. The texture is not creamy enough for me, it's a little gritty too. i'm wondering if a simple solution is a good helping of double cream rather than all that semi skimmed milk? Any thoughts? Anyhow, dumped the remaining charcoal in to the Weber & my lad knocked out a very nice stir fry for tea Cheers n Gone Nick

Justin
Defo creamy milk and maybe even a little cream Semi skinned no. Much like rice pudding needs creamy milk. I reckon English mustard too.
