Pork belly apple fennel and Prosecco

Finally cooked the pork belly from riverside garden centre .  Very impressed with the quality . 

Still didn’t get the exact crackling Steve smoking monkey achieves

Wrll done mate. Try rubbing salt onto fat cap for crackling before you cook or blow torch it. Just an idea

Yeah did that . Steve’s method was long and slow Asado style . I had it on weber then put into dish with liquid in to braise underside
