I noticed you cooked towards the 200c did that help crisp the skin up? or do you think go lower early on, take the bacon off around 40c and crank heat up to higher for remaining cook? or just leave bacon on and crank heat up?
I think cooking at th higher temperature certainly helped to keep the skin crispy!

Turkey cooked in a Wood Fired Oven!
Take 1 Turkey
Put some flavored Butter under the skin
Add a Bacon Weave to protect the top.
Get it in the Wood Fired Oven, running approximately at 180’C
Two Hours later
Rest then carve
Lovely moist Turkey!
Happy Christmas to one and all 🎅🎄
And please remember, a Turkey is not just for Christmas!

This is my attempt at Bratwurst 4 Ways for Oktoberfest!
Bratwurst on and frying some Onion.
Caramelised Onion with Balsamic Vinegar.
Bratwurst Cooked.
First Bratwurst topped with Cheese.
Melting the Cheese with a very hot grilling rack.
One topped with the Onions and one with Sauerkraut.
Topping the Sauerkraut Bratwurst with German Mustard.
Plain Bratwurst with Curry Mayo!
Sprinkle of Smoked Paprika on the melted Cheese.
Ready to EAT!

The his is my entry for Stewtember, Goan Chicken Curry, Xacutti, served with Basmati Rice and a Flat Bread.
So it looks like a clean sweep for Curry for the Stewtember Competition!

It’s the month of September so we have a New Monthly Competition!
The idea for this months subject came from @Justin !
The topic is…………… Stewtember!
Can be traditional Stew, Soup or something more exotic like Italian Meatballs or a Curry.
Just needs to be cooked in a pot on the BBQ!
