martin_b
Hi Guys Ive got a small pork shoulder joint, ( 1.8kg fat removed) that I'd like to slow cook for pulled pork. Are there any special considerations when doing a joint this small? Ive done large bone in joints before but not one this small.
Smokin Monkey
No, just treat it as you would a larger joint, after all you cooking to a IT not a time.

One quick question the pork was lovely and moist and I have some left. Whats the best way to reheat it with out drying it out?
Smokin Monkey
You can seal it in ziplock bags, then bring back to temp in a pan of hot water (Sous Vide style) Or simply in a pan and if it looks like it is drying and some of the BBQ sauce, Water or a 50-50 BBQ Sauce and Water, but normally I have not had to add anything, as you will only be beating for a few minutes.
