    Slicer problem.

Maybe try with the meat the other way up on the bed. Looks like the blade is pulling the meat grain down. At least there is a bit of fat on the top to take that punishment
  2. Hi Smokin any update on the exhaust? Looking at the drawings I guess the heat transfer tube is 75mm box?
  3. So I've priced my steel box section steel plate insulation castors and some fancy stainless steel handles and I'm all in for under £450. With the pid,fan and bits and bobs I'm looking at £460 tops. I'm lucky that I can do all the steel work at work in my own time. The only other cost will be paint but i fancy something a bit special so that needs more investigation.

  6. I like this and I'm currently pricing up steel for it. I've printed the drawings and converted to metric but the only measurement I don't have is the exhaust diameter and height. Any info would be great.

    Hi there

Hi there. After many tries and a lot of help from other members I finally managed to get signed up here. I currently have a UDS and run it with a homemade PID controller. My oldest son is a chef and I try and get my meat from him and his latest is a salted brisket so pastrami here we come! Looking forward to sharing what little I know and picking up some good info as well
