We're not out the woods just yet, this Indian variant is getting a foot hold in lots of areas. News headlines say it could all be delayed, there's no way of knowing what's going to happen...we have to take it day by day.

Reading the news headlines this morning says that Boris Johnson will announce today, from the 17th may we will be able to "Meet outdoors in groups up to 30".
I can't see any reasons to stop us holding a get together....the event is all outside, even sat under a gazebo it's all open??. ...so who is up for the first tailgate in a year??? you'll need to let us know ASAP...so lets get this on..

Needs to be around 10mm wide and maybe 3 or 5mm think...this one is 2mm and may not be up to some of the gaps you may find....if I remember right I think you need around 2 packs???

That's brilliant mate....well done...I see the first photo and thought "yes cold smoke only" but then from the 2nd photo you can hot smoke easy with the burner being setup separate, no problem at all.
I agree with Ripple about having an adjustable air vent in the roof, that one looks a little too big, by having a way to closed it down you will be able to have more control over the amount of smoke. You don't want the smoke staying too long in the cabinet it can add off flavours, it needs to travel over & around the items then vent.
Add a digi thermo you need to know the temp inside, I put a probe into one of whatever I'm smoking, fillet of fish or slab of bacon, and another probe towards the top of the box.

It's a easy come, easy go sort of weekend mate, if it does get sorted over the next few weeks it could be a enjoyable weekend. There's no communal pit / fire etc? but we always say not to worry if it's your first time. Some kit maybe about for you to use, what would you feel easy with??...even buy a small cheap kettle just to have something to cook on?? do you camp?? ...we do have a little time to get things into gear and put this tailgate on the map..

We've been over to our caravan this weekend, the sites are now open, I'm sure everyone knows that..😉. There were a few small groups of folks, that had decided to meet up for the first time in a year.
The only thought I've had is...this 30 folks in a group rule says it's for weddings, funeral's & christenings, no mention of tailgates..😆.

Seasoning is where you start a fire and just let it heat up the smoker, it can help to clear any "crap" left over from when it's made.
100% on doing this, running an offset can be a tricky one at the start, give it a go by all means, but hey throw a few chicken wings on they don't cost a lot and you get to have a snack into the bargin.....best of luck..
