In principle there is nothing wrong with using galvanised components in a BBQ or smoker provided that it does not come into direct contact with the food or hot juices cannot drip from it onto the food. If you are using the galvanised mesh at the bottom as a rack to support, say, a smoke generator that is fine but do not use it as a rack on which food will be directly placed.
