Smoked duck breasts in plum sauce with plantain

Ok so this is smoked duck using cognac and fino wine chips . 
Smoked for 1 hour on 100 c 
Reverse seared in pan with blackberry and plum white wine sauce ( from garden ) . Served with caramelised smoked plantain . Roasted potatoes and sweet potato. With fried white cabbage red onion and apple .
