Wade
Hi Roy and welcome to the Forum. I love BBQ duck too and that one looks delicious. How did it taste? "Duck/Goat" spice is an interesting concept ?. What was in it?
Artroy
Not 100% sure it’s been in a jar ( dodgy packet ) for about 6 months. However I’m gonna go with coriander tumeric and cumin and some but not much chilli. Worked a treat with the smoke getting into the meat giving a nice smoke ring and penertraiting the duck fat! Wade
A product of Trinidad and Tobago... say no more ?. We were there on holiday a few years ago and some of the flavours we tasted in their cooking were superb. I bet it tasted great
