Evening folks. I'm a Gamekeeper in the North of Scotland so have access to most types of game, particularly venison. Took the plunge and got myself a Masterbuilt recently but am completely new to smoking (apart from eating copious amounts of smoked everything!) so am looking to learn! Particularly re salting, brining, etc. Cheers.

No mate...we're in Warwick as far from the sea as you get...😆...just taken the fillets out the brine to dry,  then I'm prepping a rack of ribs ready for the ProQ for later.
