Using the other half of belly..

Stripped most of the fat out and finished up with 609gm meat and 273 of fat.

The sausage calculator comes out with..meat 609gm + 30% fat=182.7 gm...total =791.7.gm

                                                                                                                                      Rusk = 82.29 gm

                                                                                                                                   Water  = 133.71 gm

                                                                                                                                                Seasoning = 20.57 gm

Casings length = 68 inches...
