I have a Bookers card, all I took in was my headed paper and an invoice I'd previously sent out to a client, and that was for my self-employed work as a graphic designer, they didn't seem too bothered with checking anything out really, though to be fair this was a few years ago, so they may be stricter now.

Have to say this was delicious on the friday evening at the smoking weekend, I will definitely be getting hold of some of the spice mix if I can find it, simple but delicious!

Maybe better to have a cold-smoked/homemade goods tasting session on the friday evening of the smoking weekend or something? Could have cheeses, chutneys, pickles, breads etc etc?

I might be up that early but I'm hoping to getting a run in first thing, so if you could have breakfast ready for me when i'm back that'd be smashing! ??
I'm aiming to get there sort of mid afternoon friday as I have the day off but I will be packing up my car and doing a lot of faffing about in the morning most likely so we shall see. Still pondering on whether I can fit both my smokers in the car...

I have one of the 6 probe thermometers, it's great I can use it to monitor 2 smokers and 4 joints of meat all at once on one device, works like a charm!

I could if I knew what I was doing but that definitely sounds well beyond my skill level sadly. for the time being I'll stick to unplugging the fan for a few minutes and trying to remember to plug it back in...lol

I was testing out Pork Belly Burnt Ends this weekend using the method Here
I had to use pork belly strips as that was all my local supermarket had on Friday evening when I was shopping for meat.
After the first stage which was smoking on a rack for a couple of hours.
At this point I had to sprinkle with a good amount of brown sugar and drizzle liberally with honey; then a good bit of butter cut and put on top. Then they were covered with foiled and went back into the smoker for another couple of hours. At which point they looked like this
The next stage is to pour off the liquid, put some more brown sugar over the top and put it back in the smoker until it's caramelised and gone all sticky and delicious... There aren't any photos of this stage sadly as I was experimenting to see whether or not these would be any good if frozen after the first two stages, then thawed, brought up to temperature and then having the final stage done on the day of eating... I will let you know know when I give them a try in a few weeks but the I tasted after stage two were pretty amazing!!

yes a lot of gear is hard to get in the uk ? but as i've said in other threads i can get anything from abroad cheaper if i'm willing to wait, the only win the advertisers have is if i feel they deserve my business by supporting these forums and their members ? then i would buy and commit as long as its not rip off prices.

Very much not in jest, I'd love a Davy Crockett, as much as I like the challenge of keeping my temps under control (Wade makes it look very easy but I'm still very much newb!) I would love a set and forget smoker That I didn't need to be keeping so much of an eye on or that I could monitor while out.
In my youth I was a member of a car enthusiasts forum and we enjoy a few nice discounts, twas a good idea.
