Nitrates and Nitrites in meat products

Trying to extract useful information regarding the role of Nitrates and Nitrites in meat curing can be quite a challenge, but recently I have come across a great paper in the Journal of the Hellenic Veterinary Society that summarises it in a format that relatively readable. Why it is published in a Veterinary medical journal I really don't know - but I think this is a platform for a broad range of scientific publications.
