I want to have an Argentinian style BBQ. So not gas, charcoal. Do you think I'll need a chimney. I'm conscious that the ceiling will get covered in smoke. Wade Posted March 14, 2021 Share Posted March 14, 2021 Over time you will find that the wood above the BBQ will discolour, but then the colour of the whole of the wooden structure will change with age. I don't think that a chimney would be particularly effective. I would suggest getting a sheet of stainless steel or aluminium and screw it to the ceiling directly above the BBQ. If you do get cooking residue on it, it will be easy to wipe off.
