IoWsmoker
Hi, I'm from the Isle of Wight and I run a holiday park in East Cowes. I've been into burning meat for a many years but I've been trying to get into curing and smoking more recently. Oh and I roast a pig every Cowes Week on my home made insulated spit roast. Wade
Hi Julian. Welcome to the forum. Curing and smoking sounds quite scary before you begin but when you start to get your head around it, it is really quite straightforward. Here are a couple of links that may make good background reading... http://www.woodsmokeforum.uk/topic/292-the-smoking-curing-and-preserving-processes-demystified/ http://www.woodsmokeforum.uk/topic/301-using-nitrite-and-nitrate-safely-when-curing/ http://www.woodsmokeforum.uk/topic/306-take-care-when-using-acid-ingredients-in-a-cure/ The more you understand about the science behind the curing the more confidence you will have when you get started
