sotv
He calls it a Jacobs ladder in the video. But all the Jacobs Ladder cuts I have been are racks of Beef Short Ribs with the 2 layers of meat and membrane to seperate them. I would imagine this cut is from a certain area ( or number) of the ribs on the cow, different to the short ribs? If I were to ask my Butcher for a Jacobs ladder this is what I get. sotv
Found this site on different beef rib cuts amongst other cuts of beef in general Going to use this to show my local butchers and hopefully they can source some Chuck or Plate Short ribs as they seem to be what I am looking for and look very meaty.
