  5. Soo, Gonna do me some smoked meatloaf on the gravity fed this week. Goone use the below recipe but I am gonna sub a few things. bbq sauce with be some meat mitch whomp sauce. w sauce will be the bear and burton's fire shire sauce. rub will be holy voodoo.   6. Finished, was soooo tired after working a 12 then commuting, then cooking and drinking all day I didn't get a chance to post last night ughhh... Turned out fantastic but I' am not a fan of the mushrooms. I don't usually eat em anyway but I wanted to try em in the recipe as that's what it calls for. They seemed a little firm. I sautéed em for about 6 mins in butter then put em in the crock pot for 1.5 hours. Maybe they just needed more time in the cook. Other than that the stroganoff was fantastic. I added sour cream at the end to thicken it up. The 8 oz cream cheese didn't do much so I would skip that next time I think. I ended up adding a little flour slurry to thicken up the sauce. You can see the difference in the two picks. I ate mine on noodles and the ole lady ate hers on mashed potatoes. The recipe was 4.6 lbs chuck cut into strips and browned 1.5 sweet onions browned 30 oz's of cream of mushroom soup low sodium 18 ounces of beef broth mustard powder onion powder paprika some tony chacheres seasoning 8 ounces of sour cream 8 ounces cream cheese 8 ounces sliced white mushrooms
  7. Here you go... Cream of mushroom soups, Beef broth, Sautéed onions, Browned beef.... See you in 5 hours when I sauté the white mushrooms in butter and throw em in for the last couple hours..
  8. Hey All, I got the almost 5 lb spell bound rubbed chuck all cut up and in the freezer bag. I will velvet it in the fridge for about 12 hours then start the cook.
  9. I have actually looked at making that as I work at a winery but alas I just tried smoked pot roast not long ago. it's on the to do list though. I' am also not a mushroom fan so you will get an honest assessment. I only got one can of soup so i will have to get 2 more cans and I will probably get some mushrooms and a McCormick stroganoff seasoning packet.
  10. Hey All, I got a huge chuck roast left from that double pack sale last month. I didn't like the smoked chuck as I didn';t cook it long enough so it was a little tough. I was wanting to do some stroganoff over some egg noodles. I was gonna use this recipe as a base the chucks about 4-4.5 lbs. probably not gonna use many actual mushrooms as i' am not a fan but figured cream of mushroom soups might work. Any ideas?   13. Hey All, I usually don't velvet my meats because I marinade them and that usually achieves the desired results for me. I did however velvet some chicken for tacos tonight. I tend to always overcook my taco chicken so I figured I would give it a shot. I kept it in the fridge about 12 hours after a good mixing. Took it out browed it in the wok then thru in half a cup of water and some chicken taco Mcormicks seasoning. Fabulous. 1 tbs corn starch 1 tbs water 1 tbs oil some rub After marinade brown then put in half a cup of water and 1 packet of taco seasoning cooked per directions

  17. You know it's funny how much we learn from every cook. I keep a cook journal well more like binders now lol. I try and enter as much info on my cooks as possible. That way next time I make the item I have detailed notes of what works and what doesn't.
  18. Finished.. Next time I would use less brown sugar and I think I would put the butter brown sugar and nutz on the top. Still pretty good though
