yup the costco one

wasn't sure how to go with the cheeks so opted for all out uncovered cooking with a water bath underneath..6 hours in sliced one they had shrunk back a lot very dry and were chewy  so set for a disappointment shortly...emergency kiss of life, wrapped them in foil with a fare amount of apple juice and back on for another 3 hours, they puffed right up like little sponges, took on all the juice and were now fall apart in your hand tender and gelatinous sticky ..got plans for a cottage pie with cheeks next smoke maybe with a truffle mash on top

can also report last weeks jerky made with flank was wonderful..this weeks little experiment reveals silverside is not suitable for making jerky..3 kilo experiment?

however if you have a dog would be good as dental stick chews
