Pit barrel hlep

Hi guys iv got a pit barrel smoker  I'm using head beads cooking is fine was just worried about this it says full basket then take some out to fill the chimney staring when the chimney is hot and ready poor it on top of the unlit head beads In the basket and start cooking straight away I was worried about this giving off bad smoke that will taint the food

Once again, welcome to the Forum.

Is this your first cook? If it is then do a burn to get rid of any manufacturing oils etc on the inside, do as you say but give it 1/2 before cooking.

Have you mastered temperature control of it? If not I would try running it at 240’F/115’C for 1 hour before cooking, this way you will not waste any meat until you have mastered the basics, or if you want to cook something, cook a chicken as they are cheap.
