Lemon & Coriander Marinade For Chicken

I use this recipe I adapted from one I found online, works well with chicken wings and thighs. This is usually enough for 1 - 1.5KG of wings or thighs, place mixture in a ziploc bag and leave to marinade in the fridge for between 4 hours to overnight. The lemon can be substituted for lime as well if you prefer that flavour profile. 

Mix well altogether in a bowl

2 tablespoons extra virgin olive oil

1 tablespoon honey

2 cloves of minced or chopped garlic

2 tablespoons freshly squeezed lemon juice

1 tablespoon lemon zest

2 teaspoons chilli powder

1 teaspoon ground cumin

1 teaspoon kosher salt

1 teaspoon freshly ground black pepper

1/4 cup chopped fine fresh coriander leaves
