    The Bookers ribs (Yellow Box) are really meaty and will take more cooking than the Supermarket trimmed to the bone ribs.

    The method 3-2-1 is a starting point. 3 hours with rub on and naked, 2 hours foiled with a little Apple Juice, 1 hour sauced and naked to crisp.

    With the Bookers ribs I use this, 2.5, 2.5, 1 method. Cooked @ 105C/220F naked for 2.5 Hours. Foiled and added Apple Juice for 2.5 hours. then naked to crisp up.

    Then it's all down to personal taste, to sauce or not, fall of the bone or with a bite.

    Bookers is the wholesaler for Businesses and Charities?  If so dammit I am at mercy of local butchers. Got some spareribs today to cook tomorrow on wsm. Look alright but not meaty enough to be honest still it i what it is.

  1. Sorted kettle, much scrubbing with Wire brush and boiling water (and old fashioned tip,  and a sharp knife to scrape of last few bits. Slowly stick it down, looks good, will test out next time I use.

  2. Sure, I have given a good scrub in soapy hot water and now it on hot wash in dishwasher.  I have had a look at kettle lid but that so baked on greasy hard to clean, My kettle is 20 years old. I will have to get some wire wool and even then, tricky to clean

  3. I have got some JAGO stove rope to put on but was curios about where to place.  I have decided to put on the door itself. Not least because cleaning the door is much easier than cleaning the wsm cylinder, it being more portable.

Yes that is one of my favorite tactics, and find a garden center that is slightly second steering not one of the premium ones with massive footfall.  Slight second string tend to overstock and sometimes it ends with big sales...my local wyelvales is like that, decent place but not not top string.  They always have and out of season sale to make room for the Christmas stuff so they put the prices down  as they plan Christmas displays ( and sometimes so me good stuff appears like the WSM), it does not last long but now and again I get lucky.  WSM was my best success

    This has got me thinking.  My wife is going to hate this forum. I really like the look of this smoker at that price. Would lover a WSM but just can't justify that.

    Check the garden centers in the off season.  I managed to find a wsm at half price in one of wyelvales clear the warehouse events. could not believe it so snapped it  up
