Alexander Colin Saxton Posted April 14, 2022 Share Posted April 14, 2022 I cure using the EQ method to cure (Brilliant method which leaves little to chance) and then smoke in my purpose built timber smoker with any combination of "Maze", "Tube" or the superb "Smokai" from New Zealand.
