    I cure using the EQ method to cure (Brilliant method which leaves little to chance) and then smoke in my purpose built timber smoker with any combination of "Maze", "Tube" or the superb "Smokai" from New Zealand. If I want to cook/smoke further I use my Traeger Pro575 wood pellet smoker. I am learning and would welcome others experiences.
