Smoked for 2 1/2 hrs, then wrapped it in foil for another 1 1/2hr.

Had another go at brisket, use a water tray underneath ( not sure if this was good idea) the bark never got really hard. Stalled at 158 after about 4 hrs, wrapped in foil with some coke, took it off at 205 about 1 hr in the foil. Had a good smoke ring, didn’t pass the flop test. What am I doing wrong?

I got it in Asda, it was a rolled brisket, I just cut the strings off and unrolled it. It was about £10. Had it on for 4 hrs and then wrapped it for 1 hour. My thermometer packed up, so was flying blind and going by the fork test.
I’ve just thrown lamb ribs onto my kamado for tonight. -

I got chunks off eBay, cherry🍒 apple🍎 pear 🍐, as well as whiskey 🥃 from barrels. To be honest I haven’t been able to taste the difference.
