I am settled. Have a large WSM myself Justin and have used for about 10 years it is a fantastic bit of kit, in fact anything with the name Weber on it jst does what you want perfectly. Two big steaks weighing about 3Kg Not cheap, but yummie. Low n slow for about three quarters an hour to rare in the middle 110f so smoker about 250 then sear at 700f. my favourite.
