Icefever Posted March 10, 2021 Author Share Posted March 10, 2021 (edited) The fillets have been resting in the fridge for 36 hrs...they are now vac-packed and in the freezer.....at the same time I rinsed the last block of loin bacon that's now in the fridge to dry...that's heading to the smoker on Sat. Dust (I find) has to be bone dry to work, now I've made the smoker larger I find it a little slow, that's why I knocked up the bigger smoker with an air pump. 11 hours ago, Wade said: We have been worried about Ice for a while !!
